Cucumber Subs
Cucumber Subs is simple, yet delicious – and best of all, it’s healthy! If you’re looking for a quick and easy lunch idea, this cucumber subs recipe is perfect for you.
Ingredients
- 2 cucumbers, large
- 3 Roma tomatoes, sliced
- 6 tsp Mayonnaise, or hummus (your choice)
- 1 c Shredded lettuce
- 1 Slices cheese, of your choosing
- 4 oz Deli sliced turkey meat
Instructions
- Cut the cucumbers in half lengthwise. Deseed the cucumbers, and then cut in half again the other way, so that each cucumber half created two slices of “bread” for each sandwich.
- In one half of the cucumber slices, spread a layer of mayonnaise or hummus, depending on what you have chose to use.
- Top that half with tomatoes, lettuce, a slice of cheese cut in half and ¼ of the lunch meat.
- Roll up the remaining slices of meat, and layer them on the second halves of the cucumber slices.
- Place those slices onto the others to form 4 cucumber subs total.
