SHRIMP TORTELLINI

SHRIMP TORTELLINI IN LEMON GARLIC CREAM SAUCE

This shrimp tortellini recipe is a real treat. It’s made with tender shrimp, an insanely delicious creamy lemon garlic sauce, and cheese tortellini. Bonus that you can whip up this tasty dinner in just 15 minutes! 

INGREDIENTS

  • 9 ounces cheese tortellini
  • 1 tablespoon butter
  • ¼ cup finely minced onion
  • 3 cloves garlic, finely minced
  • 1 ½ cups chicken stock
  • ½ cup heavy cream, (whipping cream)
  • 4 ounces cream cheese, cut into cubes (can be light cream cheese)
  • 1 lb shrimp
  • 3 ounces baby spinach
  •  Zest and juice from 1 lemon
  •  Sea salt and pepper, to taste

  • *Methods :

  • Step 1 – Using a colander, drain the frozen shrimp and pour over cold water to thaw.
  • Step 2 – In a skillet, melt 1 teaspoon butter over medium-high heat and cook the shrimp until they are bright pink on top and the middle is opaque, about 3 to 4 minutes, being careful not to overcook them in the meantime. 
  • Step 3 – In a saucepan over medium heat, combine remaining butter, heavy cream, cream cheese, and shallots. It should take no more than 5 minutes for everything to melt and incorporate.
  • Step 4 – Combine Parmesan cheese, garlic powder, salt and pepper in a large mixing bowl. Simmer Alfredo sauce for 15 to 20 minutes, stirring occasionally.
  • Step 5 – Add the tortellini and cook until the tortellini is heated through, about 5 minutes, then toss the shrimp into the sauce making sure they are completely covered. 
  • Step Six – Last but not least, serve your dish immediately after garnishing with parsley.
