I didn’t know that was even a thing until it appeared on the specials menu at my favorite breakfast restaurant, Le Peep! Of course I was game to try it, and let me tell you, that was an AMAZING life choice! The only problem was that once I had it, I had a serious craving for it for several weeks afterwards!

Le Peep’s specials are on what appears to be a perpetually rotating schedule of unlimited new dishes, so I knew it would be a while before that deliciousness would be back on the menu. With that kind of craving, I knew I wouldn’t be able to hold out until it made its reappearance, so I decided to whip some up myself! Y’know, for survival purposes!  And once you’ve had this banana pudding French toast, you’ll definitely understand how addictive it is!

My French toast recipe is very different from others I’ve seen. While other recipes call for dipping bread in a mixture including milk, cinnamon, etc., I make French toast by dipping bread in only beaten eggs, then frying with butter until golden. This is absolutely my favorite way to make French toast, because the simplicity really allows the egg flavor to shine! I’m also one of those people who douses French toast in powdered sugar, rather than syrup, for the same reason! 

So let’s get started! There’s banana pudding French toast to be had! 

Here’s what you need:

  • 1 box of instant banana pudding (bonus points if you make your own pudding from scratch!)
  • 4 eggs
  • Butter for frying
  • 4 slices of thick white bread (I used Texas Toast)
  • 1 medium banana
  • 6 Nilla Wafers
  • Powdered sugar

Here’s what you do:

  1. Prepare the banana pudding as directed.
  2. In a medium bowl, beat the eggs together until bubbly. Transfer the beaten eggs to a shallow dish.
  3. Heat and butter a pan that is large enough to hold all 4 slices of bread at once. (I use a square griddle for making French toast.)
  4. Dip the slices of bread into the beaten egg, making sure all sides are coated, and transfer them to the griddle. Fry until golden brown, flip, and repeat, then remove the French toast from the pan.
  5. Slice a banana into rounds and crush two of the Nilla Wafers into medium-sized pieces (not just crumbs).
  6. Assembly time! Place a slice of French toast on a plate, then spoon as much banana pudding as you’d like on top of it. Spread the pudding out evenly, then layer slices of banana on top and sprinkle crushed Nilla Wafer pieces over it. Top with another slice of French toast, then sprinkle liberally with powdered sugar. Top with banana slices and two Nilla wafers. Whipped cream would also be fabulous on top! Repeat with the remaining ingredients.
