Crockpot Chocolate Peanut Clusters

Chocolate peanut clusters made easy! Making crockpot candy is so simple, perfect for the novice candy maker. The slow cooking melts the chocolate perfectly and the flavor is perfect. The peanuts go so well with the different flavors of white and dark chocolate in this candy, and the addition of butterscotch chips and toffee pieces add even more depth.

For a festive holiday twist, I like to top these chocolate peanut clusters with some red and green sprinkles, but you can use sea salt or even other sprinkles to switch these up for other holidays and occasions.

What Is Crockpot Candy?

Crockpot candy is a simple recipe to make large amounts of chocolate peanut clusters. Chocolate and butterscotch chips are melted in the crockpot over dry roasted nuts, then spoonfuls are transferred to a baking sheet to harden into cluster candy.

Ingredients

  • 2 jars (16 ounces each) lightly salted, dry roasted peanuts
  • 32 ounces white/vanilla almond bark (also known as candy coating), broken or chopped into smaller squares
  • 10 ounces (1 bag) dark chocolate chips
  • 6 ounces butterscotch chips
  • 1/3 cup toffee bits
  • Festive sprinkles , optional garnish
  • Sea salt , optional garnish

Instructions

  • Coat a 5 quart crockpot with nonstick cooking spray.
  • Add to the crockpot in layers: the peanuts, almond bark, chocolate chips, butterscotch chips, and toffee bits. DO NOT STIR.
  • Cover with the lid and cook on low for 1 hour – DO NOT STIR.
  • After an hour, stir the mixture until the peanuts are completely coated with the melted chocolate. Continue to cook on low, stirring every 15 to 20 minutes for an additional hour. Turn off the crockpot.
  • Line a couple large baking sheets with parchment paper. Using a tablespoon sized cookie scoop (or spoon), drop spoonfuls of the mixture onto the parchment paper, leaving space in-between. Sprinkle with festive sprinkles and sea salt, if using, before the chocolate hardens.
  • Chill in the fridge for 30 to 60 minutes to fully set. (Or let stand on the counter at room temperature until set, which will just take longer.)

Notes

Don’t skip or substitute the almond bark. Almond bark is essential for creating the perfect texture in these peanut clusters. It helps the chocolate set and harden to create the candy and should not be substituted with another type of chocolate.

Don’t mix at first. When you add the ingredients to the crockpot, add them in layers and wait until after the first hour of cook time to stir them.

Don’t get any water in the chocolate. Be careful when removing the lid, not to allow any water condensation that developed to drip down into the chocolate. Chocolate and water are not friends!
